Here’s a fun one! Watermelon season is hands down my favorite season, and I’ve got a simple and refreshing salad with only a few good-for-you ingredients I know you will love. Watermelon is a a fabulous fruit that’s full of lycopene, a powerful phytochemical that is rich in the antioxidants known to boost the body’s ability to prevent/fight cancer and heart disease. When it comes to cheeses, remember “Feta is Betta.” Feta cheese is rich in protein and calcium, plus, it’s relatively lower in fat. As with any cheese, tiny portions are key. Basil is rich is in nutrients like calcium, vitamin A, iron, flavenoids and fiber; plus it adds flavor without adding calories. Combined, these wholesome ingredients make for one solidly nutrient packed dish. 
Watermelon and Feta Salad
What You’ll Need
1 1/2 Cup Freshly Cubed Watermelon
3 Tablespoons Toasted and Crushed Pecans
1/2 Ounce Organic Feta Cheese
5 Large Leaves of Basil

What You’ll Do
In a toaster oven, toast a few whole pecans on a light setting. Once lightly toasted and cooled, crush pecans. On a plate, add freshly cubed watermelon. Sprinkle crumbled feta on the watermelon. Gently tear 5-10 large basil leaves and top with crushed and toasted pecans. This will make one serving. The key to success with this salad is NOT to toss it. Leave it be to prevent mushy melon or a watery dish. Enjoy!!
