I find the Frittata to be an inspirational and romantic little meal. It’s one of those dishes that feels good to make and eat. Begin realizing your culinary prowess as soon as you turn on the broiler and start prepping. The beauty of a frittata is that you can create it based on whatever you have in the kitchen. This afternoon, I had onions, peppers, tomatoes and corn in my fridge; these simple ingredients transformed our lunch. As an added bonus, what kid doesn’t like eggs? My little man loves eggs, and this is a perfect way to sneak in a few veggies.
