What You’ll Need
2 Cans of Rinsed Cannellini Beans
4 tbsp Extra-Virgin Olive Oil
1 Cup Mirepoix (1/3 Cup Each: Diced Onion, Diced Carrots, Diced Celery)
2 tbsp Finely Chopped Garlic
Fresh Lemon Juice (1 Lemon’s Yield)
2 tbsp Finely Chopped Fresh Rosemary
2 Heaping tbsp Finely Chopped Fresh Flat Leaf Parsley
2 Heaping tbsp Finely Chopped Fresh Basil
Pinch Sea Salt to Taste
Freshly Ground Pepper to Taste
What You’ll Do
In an extra large saute pan, heat 1 tbsp of olive oil and 1 tbsp garlic. Add mirepoix and cook until onions are translucent. Toss in (rinsed then dried) beans and cook until heated. Remove from the pan. In a large mixing bowl, vigorously whisk 3 tbsp of olive oil, 1 tbsp garlic, freshly squeezed lemon juice, fresh herbs, salt and pepper. Add vinaigrette to beans. Serve warm or cold.
