I find the Frittata to be an inspirational and romantic little meal. It’s one of those dishes that feels good to make and eat. Begin realizing your culinary prowess as soon as you turn on the broiler and start prepping. The beauty of a frittata is that you can create it based on whatever you have in the kitchen.This afternoon, I had onions, peppers, tomatoes and corn in my fridge; these simple ingredients transformed our lunch. As an added bonus, what kid doesn’t like eggs? My little man loves eggs, and this is a perfect way to sneak in a few veggies.
What You’ll Need:
2 Cups Liquid Egg White
10 Cherry Tomatoes (Cut in Half)
1/4 Cup Corn
1 Diced Bell Pepper
1/2 Sweet Onion (Diced)
Olive or Canola Oil Spray
What You’ll Do:
Turn on your broiler. Next, spray pan (with your Misto) to prevent sticking. Add veggies and cook with moderate heat until your onions are soft; add liquid egg whites. Let cook until egg starts to firm at the bottom of the pan. Now, it’s time to transfer your frittata to the broiler. Cook until the eggs begin to turn a golden brown (around 3-5 minutes). When removing, use caution. The handle will be hot. Cut into desired portion. Serve with your favorite healthy side. Enjoy!
