What You’ll Need:
1 Tablespoon Olive Oil
1 Teaspoon Minced Garlic
4 Cups Mixed Vegetables
Our favorites are carrots, zucchini, sweet onions, potato, leeks, and turnips
1 Can White Beans
1 Pinch Thyme, Salt and Pepper
32 ounces Natural Vegetable Broth (Favorite is Pacific Organic Vegetable Broth)
What You’ll Do:
First, heat olive oil in a heavy pot. Add garlic and vegetables. Cook until heated through. Next, add white beans (without rinsing). Season to taste with herbs, salt and freshly ground pepper. Pour vegetable broth into the pot and bring to a boil. Once it has reached a boil, reduce the heat and simmer for 20 minutes. Serve with sprouted grain bread. Enjoy!
