The days of the low carb craze left the tuberous root vegetable we all know and love as the potato shunned and abandoned. And while fried anything will never make the healthy cut (and no, french fries don’t really count as a serving of veggies), potatoes can be a great addition to your diet. Have you heard? There are about 60 kinds of phytochemicals (disease fighting properties), vitamins and minerals that are found in potatoes. For an additional nutrient bang, go for sweet potatoes. Here’s a fun, easy recipe for sweet potato crisps that are the perfect substitute to greasy chips.

What You’ll Need
4 Large Sweet Potatoes
Cayenne Pepper
Sea Salt
Olive Oil
What You’ll Do
Preheat your oven to 425. Spritz 2 large baking sheets with olive oil (use a Misto Olive Oil Sprayer for best results). Thinly slice sweet potatoes (you may find the mandoline to be a helpful tool for getting a perfect cut). Place rounds in a single layer on the cookie sheets. Either spray or drizzle your sliced sweet potato with olive oil and a dash of cayenne pepper and sea salt to taste. Place into the oven and bake for about 10 minutes, then flip. Bake for an addition 10-15 minutes or until crisps are crispy! Total time in the oven will be about 20-25 minutes. Enjoy!
